On The Go Breakfast Ideas For Busy Mums

Breakfast time can be super tricky when you are a busy mum especially if you have the school and nursery drop-off to factor in too. There is no surprise we mums forget to eat in the morning or just grab and go with something less nutritious.

Starting the day with protein will help with satiety levels and keep you feeling fuller for longer. Swapping sugar-loaded cereals for wholegrain, slow-releasing carbohydrates has many benefits. Below are my top go-to breakfast ideas for those busy mornings.

Mocha Overnight Oats

  1. Ingredients:

    45g oats

    1 tsp honey

    100g greek yoghurt

    150ml skimmed milk

    2 tbsp unsweetened cocoa powder

    1 tsp maple syrup

    Serve with coconut and choc chips

    2. Method:

    Add the oats to the bowl along with the honey, coconut yoghurt, expresso and protein powder. Mix to combine, cover and place in the fridge overnight. Before serving top with cocoa nibs.

Vanilla Berry Protein Smoothie

  1. Ingredients

    360ml water/milk of your choice

    1 scoop vanilla protein powder

    150g frozen strawberries

    100g frozen blueberries

    100g frozen raspberries

    2. Method

    Put all ingredients into a blender. Serve and top with fresh fruit.





Wakey Wakey Smoothie

  1. Ingredients

    1 scoop matcha protein

    2 peaches, cubed

    1/2 thumb fresh ginger, grated

    100ml skimmed milk

  2. Method

    Grate the ginger and set it to one side. Place all the ingredients into a blender until smooth. Serve over ice.




Peanut Butter Berry Toast

  1. Ingredients

    120g frozen blueberries

    2 medium slices of wholemeal bread

    1 tsp honey

    40g almond butter

  2. Instructions

    Add the berries and honey to a saucepan with 1 tbsp water and reduce on the hob for 8-12 minutes on low heat. Until the berries start to break down. Toast the 2 slices of medium wholemeal bread and add 20g almond butter to each slice. Add the berries on top of the almond butter-covered toast. Serve with a cuppa!
